    Salmon is marinated in soy sauce and mirin and served over fresh udon noodles. A simple dinner and so delectable.

    Ingredients
    Serves: 4 

    • 600g salmon fillet, cut to serve 4
    • 1/4 cup soy sauce
    • 1/4 cup mirin
    • 400g fresh udon noodles
    • 2 limes, halved
    • dressing
    • 3 cloves garlic
    • 2cm fresh ginger
    • 1/2 cup fresh coriander leaves
    • 1/4 cup peanut oil
    • salt and freshly cracked pepper to taste

    1. Combine the soy sauce and mirin and pour over the salmon in a dish. Marinade 4 hours, turning once.
    2. Cook the noodles in boiling salted water for 2-3 minutes or until cooked. Do not overcook! Drain.
    3. Place the dressing ingredients in a food processor and process into a fine paste. Season with salt and pepper to taste. Add the dressing to the noodles and toss.
    4. Heat a little oil in a frying pan and cook the salmon 1-2 minutes on each side. If you like your fish well done, cook a little longer.
    5. Serve the salmon on top of the noodles, with lime halves on the side for squeezing.
