A super simple dish which is really delicious. The lemon juice really brightens and balances the dish.
2 tablespoons extra virgin olive oil
1 onion, chopped
400g zucchini, grated
60g parmesan, grated
1 lemon, zested and juiced
salt and freshly ground black pepper to taste
- Heat the oil and fry the onion over medium heat until very soft. Add the zucchini and cook 10 minutes.
- Cook the spaghetti in boiling salted water until al dente. Drain and return the pasta to the pot with a little of the cooking water to moisten.
- Season the zucchini with salt and pepper and toss through the pasta with 2/3 of the parmesan, 1 teaspoon lemon zest, and a few drops of lemon juice. Serve with remaining parmesan.
