Zucchini Spaghetti

    A super simple dish which is really delicious. The lemon juice really brightens and balances the dish.

    Serves: 4 

    • 2 tablespoons extra virgin olive oil
    • 1 onion, chopped
    • 400g zucchini, grated
    • 500g spaghetti
    • 60g parmesan, grated
    • 1 lemon, zested and juiced
    • salt and freshly ground black pepper to taste

    1. Heat the oil and fry the onion over medium heat until very soft. Add the zucchini and cook 10 minutes.
    2. Cook the spaghetti in boiling salted water until al dente. Drain and return the pasta to the pot with a little of the cooking water to moisten.
    3. Season the zucchini with salt and pepper and toss through the pasta with 2/3 of the parmesan, 1 teaspoon lemon zest, and a few drops of lemon juice. Serve with remaining parmesan.
