Quick and Easy Olive Oil Pasta

    When I was little, one of my favourite snacks was when nan would make us kids cheese pasta. Boiled pasta, melted cheese...that's it. This is my grown up version of that with a bit more flavour and bite!

    Serves: 2 

    • 1-1.5 cups dried pasta
    • 1/2 cup extra virgin olive oil
    • 2 cloves garlic, crushed
    • salt and cracked pepper, to taste (I like mine quite peppery but not everyone agrees!)
    • 1 teaspoon dried chilli flakes (optional)
    • freshly grated parmesan cheese (as much as you want, for me, it's a lot!)

    1. Cook pasta according to packet instructions until al dente.
    2. In the mean time, heat oil over a low-medium heat and add garlic, salt and pepper and chilli.
    3. Once pasta is cooked, drain and toss through olive oil.
    4. Serve with a generous sprinkling of parmesan cheese.
