This marinade is great for chicken, fish, pork and lamb chops. Preserved lemons are available in Middle Eastern markets - you only use the rind.

Serves: 4 

  • 1/2 preserved lemon, rind only
  • 3 tablespoons flat leaf parsley, chopped
  • 4 tablespoons olive oil
  • freshly ground black pepper and sea salt to taste

  1. Shred the lemon rind finely and mix with the parsley, olive oil, salt and pepper. Now marinate!
