    Sweet potato (or kumara in NZ!) make a great alternative to normal chips. I usually serve these with my beetroot hummus. Yum!

    Serves: 4 

    • 2 sweet potatoes
    • oil for deep frying (peanut is best)
    • sea salt

    Preparation:10min  ›  Cook:10min  ›  Ready in:20min 

    1. Cut the sweet potatoes into long thin strips using a vegetable peeler.
    2. Heat oil in a deep saucepan until hot. Deep fry the sweet potatoes in batches until golden and crispy. Drain on kitchen towels and sprinkle with salt. Serve immediately!
