Oysters (Raspberry Jelly and Cream Whoopie Pies)

My mum used to make these alot when my brother and my primary classes had end of year parties and was always a hit with kids and teachers alike. Oysters are basically little cakes with jelly, coconut and cream. I hope you all like them, feel free to comment and post pictures :)

Serves: 4 

  • 1 packet vanilla or butter cake mix
  • 1 packet raspberry jelly
  • coconut
  • thickened cream (whipped)
  • vanilla essence (optional)
  • oil or butter (for tray)

  1. Preheat oven as directed to on packet.
  2. Spray patty cake tray with a little oil or grease with butter.
  3. Prepare cake mix as directed on packet, I like to add a little vanilla essence if I use cake mix as it seems to give it a little more of a homemade taste. Put about 1 tablespoon of cake mix in each patty cake, just remember when cooking they do not take long so just keep an eye on them. It really depends on the oven you have, I find they take about 5 - 10 mins, give or take. When cooked allow to cool completely.
  4. Mix jelly as directed by packet but if you would like a stronger taste use less water. The trick with the jelly is to let it cool completely without it setting.
  5. When cake and jelly are cooled, dip the cakes first in jelly then in coconut until all cakes are done. If you have used less water you may need more jelly. When you have finished dipping put the cakes in the fridge for the jelly to set. Also if you have any jelly left chances are it will have coconut in it, but let it set cause chances are if you have kids they will love it - mine does.
  6. When set cut each cake in half but not all the way through, then put about a teaspoon of whipped cream in the middle.


The quantities of ingredients really depends on how many you make. You can also make the cakes from scratch if you have a nice recipe. I have never tried this using chocolate cake or any other jelly flavors but I'm sure any combination would be nice.
