Asian Style Beef, Bean and Mushroom Soup

    A soup I made up for myself and enjoyed so I figured I would share. Serves 2

    Serves: 2 

    • 2 cups (500ml) beef broth (good quality)
    • 120g lean minced beef or veal
    • 60g enoki mushrooms, pulled apart
    • 60g small oyster mushroomns, whole
    • 3 mushrooms, quartered
    • 50g green beans, cut into 2.5cm lengths
    • 2 fresh red chillies, seed and chopped
    • 6 fine slivers of fresh ginger (aprox 2.5cm long)
    • 1 small lime, grated, rind and juice

    Preparation:10min  ›  Cook:30min  ›  Ready in:40min 

    1. Place broth in saucepan with lime rind, juice, ginger and chillies. Set to medium heat.
    2. When warm add green beans.
    3. When soup is bubbling add the mince in small (1.5cm) round lumps (creating little meatballs). Simmer for 15 minutes.
    4. Add the 3 mushrooms and simmer for 5 minutes.
    5. Add the oyster and enoki mushrooms and simmer for 2 minutes. Serve.
