    This is a traditional way to serve Peking duck, wrapped in a flour pancake. You can buy the pancakes frozen at Asian shops and the roast duck from Asian takeaways.

    Serves: 5 

    • 10 frozen pancakes, thawed
    • 1/2 crispy roast duck (not chopped up)
    • 1/2 cucumber, cut into long matchsticks
    • chives
    • handful snow pea shoots
    • 1/2 cup hoi sin sauce (or plum sauce)

    1. Pick the meat from the duck, slicing up larger pieces and removing fatty bits.
    2. Heat the pancakes in the microwave or a bamboo steamer until soft and just warm.
    3. Spread a teaspoonful of sauce in the middle of the pancake. Lay greens and the duck from the centre to one edge, fold the bottom up and then fold the sides in. Serve right away.
