BBQ Snapper with Basil Oil

    A very simple way to prepare whole snapper which brings out the flavour. Make sure the BBQ grill is very hot to ensure the fish does not stick.

    Serves: 4 

    • 1 whole snapper per person
    • Basil oil
    • 1 bunch basil
    • 200ml extra virgin olive oil
    • juice of one lemon
    • salt

    1. To make the oil, combine the basil, a pinch of salt, the olive oil and lemon juice in a food processor until smooth.
    2. Trim the fins and scale the fish. Make three cuts in each fish from top to bottom so that it cooks evenly.
    3. Heat the barbecue to hot. Dry the fish and season it well with salt. Each snapper will only take about eight minutes to cook. Serve drizzled with basil oil.
