This is a hummus with a bit of a difference adding pumpkin to the spicy mix, goes great with vegetables and bread sticks.
1 (400g) tin chickpeas, drained and rinsed
1 clove garlic
1 cup cooked and mashed pumpkin
1 tablespoon tahini
1/2 teaspoon cumin
salt and pepper, to taste
1 fresh lime, juiced
1 tablespoon olive oil
- In a food processor or blender, add the chickpeas and garlic and puree until smooth.
- Add the pumpkin, tahini and cumin, blend to combine.
- Add the lime and olive oil monitoring the thickness of the hummus to your preferred consistency.
