This is a quick meal my partner and I love to whip up in a hurry. Who doesn't love cheese and bacon! This recipe mixes these two favorites into one delicious combination. Finished off with sour cream and fresh green onions this is one the family will enjoy!
Fry your bacon until golden brown. Drain excess oil and set aside.
Dice your potatoes into square bite sized pieces and cook in the oil leftover from your bacon. Fry your potatoes until they are golden brown and soft. Season with salt and pepper. Drain excess oil from potatoes and place on a microwave safe plate.
Break up your bacon into bits over the top of your potatoes.
Take your shredded cheddar cheese and sprinkle it over the top of the bacon.
Microwave the potatoes for 30 seconds or until the cheese is nicely melted.
Serve warm with a spoonful of sour cream on top and green onion to garnish.
