Mediterranean Mixed Vegetables

    I love this mixture of vegetables that has a Mediterranean feel to it and goes with just about anything. Tastes great as a stand-alone lunch too!

    Ingredients
    Serves: 4 

    • 1 dash olive oil
    • 20g butter
    • 1 onion diced
    • 3 cloves garlic, diced
    • 1 zucchini, diced
    • 1 red capsicum, diced
    • 8 mushrooms quartered
    • 1/4 glass white wine
    • 1/2 teaspoon rosemary
    • salt and pepper, to taste

    1. In a large frypan bring to a medium heat then add the olive oil and butter. When melted add the onion and garlic and stir until it starts to soften.
    2. Add the zucchini and capsicum. When almost soft add the mushrooms, white wine and rosemary. When the wine has almost evaporated, taste then season with salt and pepper to taste.
