Sambal Prawns Stir Fry

An Indonesian method of preparing fresh prawns - stir fried with bok choy, chilli sauce (sambal) garlic and chillies. If you like assertive flavours you'll love this one!

Serves: 4 

  • 32 medium prawns, shelled and cleaned
  • 1/2 bunch fresh coriander, chopped
  • 3 cloves garlic, chopped
  • 3 bird's eye chillies, chopped
  • 90ml fresh lime juice
  • 30ml kecap manis
  • 30ml peanut oil
  • 2 bunches baby bok choy, washed and leaves separated
  • 3 tablespoons chilli sauce (sambal)
  • 150ml chicken stock
  • salt and pepper

  1. In a bowl, mix the prawns, half the coriander, garlic, chillies and lime juice. Add the kecap manis, stir to combine and season with salt and pepper to taste.
  2. Heat a frying pan. Add the peanut oil, and when hot throw in the prawns.
  3. Add the bok choy and the chilli sauce. Stir fry, tossing the prawns and bok choy until the leaves are wilting. Add the chicken stock.
  4. Bring to a simmer, toss in the remaining coriander, season and serve at once with rice.

This dish had flavours that were both refreshing and alive. My husband and I loved it and I will make it again. I didn't have limes in the kitchen so I just used lime juice from the container. It still was great. - 15 Sep 2014
