In Bali I picked up a taste for this simple preparation of steamed vegetables in peanut sauce. Use whatever vegetables you like with this sauce: try cabbage, snow peas, broccoli, bean sprouts. Halved hard boiled eggs are also traditional.
Heat the oil in a large pan and fry the onion, ginger, garlic and chilli for a few minutes. Add the peanut butter, water, vinegar, sugar and soy sauce. Simmer over a low heat, stirring until incorporated. Taste for seasoning.
Stir in the lime juice and serve over steamed vegetables and halved hard boiled eggs.
