Easy Gado Gado Sauce

In Bali I picked up a taste for this simple preparation of steamed vegetables in peanut sauce. Use whatever vegetables you like with this sauce: try cabbage, snow peas, broccoli, bean sprouts. Halved hard boiled eggs are also traditional.

Serves: 6 

  • 1 tablespoon oil
  • 1 onion, diced
  • 3cm ginger, grated
  • 1 clove garlic, crushed
  • 2 small red chillies, chopped
  • 300g crunchy peanut butter
  • 700ml water
  • 2 tablespoons rice or white vinegar
  • 1 1/2 tablespoons light brown sugar
  • 2 tablespoons soy sauce
  • 2 tablespoons lime juice

  1. Heat the oil in a large pan and fry the onion, ginger, garlic and chilli for a few minutes. Add the peanut butter, water, vinegar, sugar and soy sauce. Simmer over a low heat, stirring until incorporated. Taste for seasoning.
  2. Stir in the lime juice and serve over steamed vegetables and halved hard boiled eggs.
