Spicy Coconut Rice

    A lovely side dish for an Asian themed meal. Rice is simmered in coconut cream and fish sauce with spices. Serve warm.

    Serves: 4 

    • 1 cup jasmine rice
    • 1 tablespoon oil
    • 2 spring onions, sliced
    • 1 stalk lemongrass, white part only, finely minced
    • 1 clove garlic, crushed
    • 1/4 red capsicum, chopped
    • 1/4 green capsicum, chopped
    • 2 red chillies, seeded and chopped
    • 1 cup (250ml) coconut cream
    • 3 tablespoons water
    • 1 tablespoon fish sauce
    • lime juice to taste

    1. Wash the rice well, drain and set aside.
    2. Heat the oil and fry the onion, lemongrass, garlic, capsicum and chilli for a few minutes. Add the rice, coconut cream, water and fish sauce and bring to a simmer. Cover, turn to very low and cook 10 minutes. Turn off the heat and allow to sit for 10 minutes.
    3. Fluff the rice with a fork and add the lime juice. Check to see if it is salty enough; if not, add more fish sauce.
