Though this recipe has a long list of ingredients and long steps, these rich,soft and sweet chocolate cupcakes are mixed with original crushed Oreo pieces, and frosted with a smooth cream cheese frosting ALSO mixed with finely crumbed Oreos are so worth the time. I promise. And if that' s not enough to tempt you, a sweet surprise is under the cupcake. These babies cry Oreos all over! How can you resist ?
Pre-heat the oven to 175 degrees C, then line cupcake liners, and place 24 whole Oreo cookies into the cupcake patties.
Take 12 Oreo cookies and place it in a zip lock bag, crush with a wooden roll pin until smaller chunks appear, it does not need to be to fine. Remove and place in a bowl. Now place the last 6 Oreo cookies in the bag again. This time crush until super fine. (You may do this in a food processor.) Remove into a bowl and set aside.
Placing a heatproof bowl over a simmering pot of water, making sure that the water does not touch the bowl, add in the dark chocolate pieces. Stir until it has completely melted. Remove from heat and set aside letting cool.
Meanwhile, sift the flour, baking soda, baking powder, cocoa powder into a bowl.
In a large bowl, add the butter and cream for 1 min on high speed. Add half of the sugar and cream for another 1 min. Finally add all the sugar and cream for 2 more minutes, until it becomes a lighter colour and fluffy.
Add one eggs ONE AT A TIME and beat on medium speed. Make sure it has fully incorporated before adding the next egg and scrap down the sides of the bowl with a spatula in between. Beat in vanilla until combined. Scrape down the bowl again.
Beating on low, add in the melted chocolate, beating just until combined.
At this point, use a spatula. We do not want to over mix. Add in half of the flour and half of the milk. Fold until just combined. doesn't matter if there's still visible flour. Repeat with the remaining flour and milk, fold until fully combined.
Add in the chunky Oreo crumbs and fold until combined. Do not over mix the batter.
Using an icecream scoop, fill the cupcake patties with the batter until 1/3 full.
Finally, bake at 175 degrees C for 20-25 mins. (Please check near the last 5 mins as oven temp varies.)
Place cupcakes on a cooling rack and let chill until cool.
To make the cream cheese frosting, firstly whisk the soft cream cheese until smooth. Add in the butter and whisk until no lumps are seen and the mixture is smooth. Add in the powdered sugar in two portions, whisking well between each. Then whisk in the milk powder.
Add in the vanilla and whisk. Lastly, whisk in the fine Oreo crumbs. If the mixture is too soft to hold its shape, refrigerate for 20 mins, covering the bowl with cling wrap.
Pipe onto the cooled cupcakes, decorating in your own style ! :D
If the frosting is not sweet enough you may add more icing sugar to your liking.
