Peach Crumble

    Peaches would have to be our favourite fruit so during the season we indulge. This is yummy. At the end of the season they are not always looking their best so cook them up.

    Serves: 4 

    • 10 fresh peaches, pitted and chopped
    • 1/2 cup brown sugar
    • 1 pinch cinnamon
    • 1/4 cup water
    • 2 cups rolled oats
    • 100g butter or margerine
    • 1 cup brown sugar
    • 2 teaspoons vanilla extract
    • 1 teaspoon salt
    • 2 pinches cinnamon

    1. Preheat oven 180 degrees C. Lightly grease rectangular or square cake tin (large).
    2. Cook peaches, 1/2 cup brown sugar, 1 pinch cinnamon and water in a medium saucepan, covered, over medium heat for 8-10 minutes or until tender. Spread over base of cake tin.
    3. Meanwhile, in a bowl mix oats, butter, 1 cup brown sugar, vanilla, salt and 2 pinches cinnamon until crumbly.
    4. Spread crumble over the top of peaches.
    5. Bake for 30-40 minutes in preheated oven until top is crisp and golden brown. Stand for 10 minutes before serving.


    Delicious with vanilla or coffee ice cream.
