Smoked Fish with Pasta

    Serves: 2 

    • 1 teaspoon crushed garlic
    • 1 onion, diced
    • 250g flaked smoked white fish - I use whatever we have, Moki, Warehou, Terakihi...
    • 1 can chopped tomatoes
    • 1 tablespoon tomato paste
    • half teaspoon each of dried basil and oregano
    • 250g penne pasta

    1. Lightly fry garlic and onion until the onion is clear.
    2. Cook the pasta according to the packet directions.
    3. At the same time add the fish, tomatoes, paste and herbs to the frying onion. Simmer until the fish is heated and the sauce is reduced.
    4. When the sauce is reduced and the pasta is cooked mix them together and serve.
