Easy Passionfruit Souffle

    Only three ingredients, very easy and quite dramatic for a dinner party dessert. Like all souffles, serve immediately when they are done, don't wait!

    • 4 eggs, separated
    • 1/2 cup (110g) caster sugar
    • pulp from 3 passionfruit

    1. Preheat the oven to 190 degrees C. Grease 6 small ramekins with butter and dust with caster sugar. Place on a baking sheet.
    2. Whisk the egg yolks with half the caster sugar until pale and thick. Stir in the pulp. In a separate bowl, whisk the egg whites with the remaining sugar until stiff.
    3. Fold the egg whites into the passionfruit mixture and divide between the ramekins. Bake 12-14 minutes until risen and golden.
