Babka Cake

    Babka is a moist Polish cake, flavoured with almond and lemon. It's the perfect cake for afternoon tea.

    Ingredients
    Makes: 1 cake

    • 20g butter for greasing
    • 3 tablespoons breadcrumbs
    • 150g plain flour
    • 100g potato flour
    • 2 teaspoons baking powder
    • 200g butter or margarine
    • 200g icing sugar, sifted
    • 1 teaspoon vanilla sugar
    • 4 large eggs, separated
    • 3-4 tablespoons sour cream
    • 1 tablespoon almond extract
    • 1/2 lemon, zested and juiced
    • 20g raisins

    1. Liberally grease a ring tin with about 20g butter. Sprinkle evenly with the breadcrumbs and set aside. Preheat oven to 180 degrees C.
    2. Sift together the plain flour and baking powder. Stir in the potato flour. Set aside.
    3. In a clean bowl, cream the butter till light and fluffy. Whisk in icing sugar, vanilla sugar, egg yolks, sour cream, almond extract, lemon zest and juice. Beat till combined. Add in the dry mixture and stir till well incorporated, then fold in the raisins.
    4. In a clean bowl, beat the egg whites to stiff peaks. Gradually add the egg whites to the cake mixture, gently folding in till evenly incorporated. Spoon the mixture into the prepared tin.
    5. Bake for 30 to 40 minutes, or until a skewer inserted in the centre of the cake comes out clean. Cool slightly before inverting the cake onto a serving plate, and dust with icing sugar if desired.

    Made this for Easter. I was excited to see a Babka recipe made without yeast. However, I found it a bit dry and not a true Babka. Babka with Almond? I brought it to an Easter brunch and people who have never had a real Babka thought it was delightful. They probably would give it 5 stars. Will I make it again?
