    A great one pot dish from China, easy to make but full of assertive flavours from Chinese sausage and shiitake mushrooms.

    Serves: 4 

    • 2 chicken breast fillets, cubed
    • 2 cups jasmine rice, well rinsed
    • 3 cups chicken stock
    • 1 Chinese sausage, sliced
    • 8 shiitake mushrooms, sliced
    • 1 tablespoon minced fresh ginger
    • 2 spring onions, sliced
    • Marinade
    • 2 tablespoons vegetable oil
    • 3 tablespoons oyster sauce
    • 1 tablespoon light soy sauce
    • 1 teaspoon dark soy sauce
    • 1 tablespoons Chinese rice wine (Shaoxing wine)
    • 1/2 teaspoon sesame oil
    • 2 teaspoons caster sugar
    • 1/2 teaspoon white pepper
    • 1 tablespoon cornflour

    1. Combine the marinade ingredients and pour over the chicken and mix well. Let marinate 1 hour.
    2. Put the rice in a heavy casserole with a lid, add the stock, cover and cook over low heat 20 minutes.
    3. Spread the marinated chicken over the top of the rice. Add the sausage, shiitake mushrooms and minced ginger. Cover and cook 15 more minutes until rice and chicken are cooked.
    4. Sprinkle with spring onion and serve.
