Beef and Vegetable Udon Noodles

Stir fries are delicious and super simple but you have to have all the ingredients prepared before you cook as the actually cooking part is very quick.

Serves: 2 

  • 600g eye fillet, thinly sliced
  • 400g fresh udon noodles
  • 200g green beans, cut into 2cm lengths
  • 8 button squash, quartered
  • 1 punnet oyster mushroooms
  • 2 tomatoes, thinly sliced
  • 100g walnuts, toasted
  • For the sauce
  • 2 tablespoons black bean sauce
  • 2 teaspoons fish sauce
  • 600ml chicken stock
  • 50ml Chinese rice wine (Shaoxing wine)
  • 2 tablespoons light soy
  • 1 teaspoon sesame oil

  1. Put the udon noodles in a bowl and cover with boiling water for 2 minutes then drain and set aside. Heat oil in a wok.
  2. Stir fry the beef in batches, then put in a bowl. Do the same with the vegetables.
  3. Pour all the sauce ingredients into the wok. Also add any juices that have collected from the beef and vegetables. When the sauce is hot, toss in the cooked ingredients and coat well.
