Have to admit I don't cook brains very often, but when I do I love this simple recipe that actually manages to cook the brains to perfection.

Serves: 4 

  • 4 sets of brains
  • 1/2 teaspoon salt
  • 2 tablespoons flour
  • pepper, to taste
  • 1 egg, lightly whisked
  • 2 tablespoons milk
  • 1/2 cup breadcrumbs
  • 4 tablespoons butter

Preparation:15min  ›  Cook:15min  ›  Ready in:30min 

  1. In a saucepan of boiling water with the salt add the brains and bring to the boil then drain. Remove any membrane and/or blood vessels.
  2. Prepare the crumbing elements in separate shallow dishes. 1/ mix the pepper and flour 2/ whisk the egg and milk 3/ breadcrumbs.
  3. Crumb the brains by coating in flour, then dipping in egg mix, then crumbing. Fry in the butter at a medium heat for 7 to 10 minutes.
