    My dad used to make this when I was little but he didn't go to the trouble to remove the fat or dice the lamb chops, feel free to use whatever veg you have in the house.

    Ingredients
    Serves: 4 

    • 600g lamb chops
    • 1 onion, sliced
    • 1 carrot, sliced
    • 1 potato, sliced
    • 2 stalks celery, sliced
    • 2 tablespoons flour
    • 1 cup stock

    Directions

    1. Preheat the oven to 180 degrees C.
    2. Remove the fat from the lamb chops and dice into pieces. Roll the meat in the flour and place in a casserole dish in layers with the vegetables. The top layer should be potato.
    3. Bring the stock to the boil then tip over the meat and vegetables layers then add a lid. Place in the oven and cook for 1 hour.
    4. Remove the lid; adjust the flavour with salt and pepper. Return to the oven without the lid and cook for an additional 20 minutes until the potato is brown.
