Tuna and Spinach Linguine

    This pasta sauce is ready in a snap and so delicious and healthy! Use good quality tuna for best results - I like Sirena.

    Serves: 3 

    • 2 tablespoons olive oil
    • 2 cloves garlic, chopped
    • 1 teaspoon chilli flakes
    • 1 (200g) tin tuna in oil
    • 400g dry linguine
    • handful baby spinach, chopped
    • 1 lemon, juiced
    • salt and pepper to taste

    1. Cook the pasta in boiling salted water and drain. Meanwhile, saute the garlic and chilli in the olive oil for one minute, then add the tuna and mix in. Turn the heat down and mix in the spinach and lemon juice. Toss with the pasta and serve immediately.
