New Atkins Orange and Poppy Seed Scones

    One of my favourite 'naughty' treats - but the best thing, there's nothing naughty about them! Low carb and full of flavour, perfect with a cup of tea. Only 5.6 grams of carbs per scone.

    Makes: 4 scones

    • 1/3 cup heavy whipping cream
    • 2 tablespoons sour cream
    • 3/4 cup soy flour
    • 3 tablespoons unsalted butter
    • 1/2 teaspoon salt
    • 1 1/2 tablespoons sweetener
    • 1 small egg
    • 1/2 tablespoon poppy seeds
    • 1 1/2 tablespoons orange zest

    1. Preheat oven to 180 degrees C.
    2. Combine soy flour, sugar substitute and salt.
    3. Add softened butter pieces and mix until it resembles a coarse meal.
    4. In a separate bowl, whisk together heavy cream, sour cream, egg, poppy seeds and zest. Pour over the dry mixture and stir with a fork just until combined.
    5. Cover dough with plastic wrap and chill for 30 minutes.
    6. Divide mixture into 4 equal discs measuring around 6-7cm across, and space evenly on baking sheet. Bake for 25 minutes or until the bottoms of the scones are golden brown. Makes 4.
