A Delicious Recipe For Grilled Chicken with White Wine Mushroom Sauce

    • 1 lemon, quartered and juiced
    • 1/4 cup water
    • 1 cup sea salt
    • 4 boneless chicken breasts, skin on
    • 4 drops liquid smoke
    • salt and pepper to taste
    • 4 tablespoons unsalted butter
    • 8 leaves sage
    • Mushroom Sauce
    • 3 tablespoons unsalted butter, divided
    • 1 tablespoon olive oil (olive oil not only adds to taste, but also has many health benefits)
    • 220g (8 ounces) of baby bella mushrooms, sliced
    • 1/2 sweet onion, chopped
    • 1/4 teaspoon cayenne pepper
    • 1 1/2 cups chicken stock
    • 1/2 cup semi-dry biodynamic white wine
    • 1 tablespoon flour (it is better to use all-purpose flour)

    1. A grill pan will be required to prepare this dish. It is also important to preheat your oven to 220 degrees C (425 degrees F).
    2. To brine the chicken, take a large bowl and mix lemon juice, water and salt. Once the mixture has been dissolved, you should add chicken and lemon quarters. Marinate chicken in this mix for about 30 minutes. After this, you should remove it from marinade and pat it dry.
    3. Next, you should preheat your grill pan over medium heat. Massage each chicken breast with 1 drop of liquid smoke and add pepper and salt as per your taste. It is important to rub the under the skin of each chicken breast with 1 tablespoon butter. Also place 2 sage leaves under each chicken breast's skin.
    4. Then place them on the hot grill and wait until skin is golden brown. This will take about 20 minutes. Transfer the chicken to a baking tray and bake in the preheated oven for 25 minutes.
    5. In order to prepare white mushroom sauce, melt 2 tablespoons of butter mixed with olive oil. This mixture should be heated in a large saute pan over medium heat. Add mushrooms, onions and cayenne pepper. It will take about 8 minutes for mushrooms to get tender and onions to get translucent.
    6. Next step is to add chicken stock and wine and simmer until it has been reduced by one third. Take a small bowl and blend the remaining butter with flour. This should be added to your sauce with a wooden spoon. In about 5 minutes, sauce will resemble loose gravy. You can serve this sauce with warm chicken now.
