Lamb Marinade, for Salad

A great summer dish, lamb backstraps are marinated, barbecued and then served over mixed greens. Garnish with Parmesan cheese, if desired.

Serves: 4 

  • 100ml olive oil
  • 40g pitted olives
  • 1 clove garlic, crushed
  • 8 semi-dried tomatoes, chopped
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon oregano
  • 1 teaspoon capers
  • freshly ground black pepper
  • 400g lamb backstraps
  • mixed salad greens
  • Parmesan cheese (optional)

  1. Blend all of the marinade ingredients and pour over the lamb. Marinate at least 2 hours, the more the better.
  2. Barbecue the lamb 3-4 minutes a side, remove and let rest, then slice the lamb on the diagonal. Serve over salad greens.
