A basic Moroccan marinade that works very well on barbecued tuna, blue eyed cod, snapper or bream. Serve the fish with couscous.

Ingredients
Serves: 4
- 2 bunches coriander
- 1 bunch flat-leaf parsley
- 4 cloves garlic
- 2 tablespoons cumin
- 2 tablespoons paprika
- 1 small red chilli, seeds removed
- 100ml lemon juice
- 1 cup (250ml) olive oil
- 1/2 teaspoon salt

- Process all the ingredients together in a food processor.
- Pour the marinade over fish cubes or fish steaks and refrigerate for 2 hours, turning occasionally. Bake or barbecue.
