    A basic Moroccan marinade that works very well on barbecued tuna, blue eyed cod, snapper or bream. Serve the fish with couscous.

    Ingredients
    Serves: 4 

    • 2 bunches coriander
    • 1 bunch flat-leaf parsley
    • 4 cloves garlic
    • 2 tablespoons cumin
    • 2 tablespoons paprika
    • 1 small red chilli, seeds removed
    • 100ml lemon juice
    • 1 cup (250ml) olive oil
    • 1/2 teaspoon salt

    Directions
    Preparation:10min  ›  Extra time:2hours marinating  ›  Ready in:2hours10min 

    1. Process all the ingredients together in a food processor.
    2. Pour the marinade over fish cubes or fish steaks and refrigerate for 2 hours, turning occasionally. Bake or barbecue.
