    Easy muffins that use leftover pesto and salami for something a little more savoury than the average muffin. Different cheeses can be used on the top to availability and preference.

    Ingredients
    Serves: 12 

    • 2 cups self raising flour
    • 1 1/2 cups of diced salami
    • 1/3 cup pesto
    • 3 eggs, lightly whisked
    • 1/3 cup vegetable oil
    • 1/2 cup milk
    • 2/3 cup grated cheddar cheese

    1. Preheat oven to 180 degrees C. Grease a 12 hole muffin tray.
    2. Sift the flour into a bowl then stir in the salami, pesto, eggs, oil and milk.
    3. Spoon the mixture into the prepared muffin tray and sprinkle with the cheese, then bake in the preheated oven for 20 minutes.
