Fudgy Mega Chocolate Cake

    My 10yo daughter came up with a chocolate cake recipe when we were looking through my collection of recipes, looking for a recipe to make together. I tweaked things a little bit and it turned out quite good.

    Makes: 1 cake

    • 1 cup melted butter
    • 2 cups plain flour
    • 1 1/2 cups raw sugar
    • 2 eggs
    • 1 teaspoon bicarb soda
    • 1 teaspoon cinnamon
    • 1 teaspoon vanilla essence
    • 1 cup milk
    • 1/3 cup sweetened condensed milk
    • 1 cup chocolate bits
    • 1 1/2 cups cocoa (way too much, but it worked)

    1. Preheat oven to 180 degrees C. Add all the dry ingredients except chocolate bits to mixing bowl.
    2. Add eggs, milk and condensed milk and mix until combined.
    3. Add chocolate bits and stir through.
    4. Pour into prepared springform cake dish. I put the layer of baking paper between the top and bottom of the springform before I clamp it and then grease everything with extra butter.
    5. Cook for 20-25 minutes. Remove from oven. Cake will still be uncooked in the centre and wobbly. Cover the top with foil and replace cake in oven.
    6. Cook for approx 20 minutes more. The cup of chocolate bits makes the cake runny unless you continue to bake it. The foil stops the top from burning.
    7. May need to add more/less time as ovens are all different. Test cake with toothpick inserted into centre of cake, if it comes out clean the cake is cooked.


    Cake is super rich, but awesome with the addition of vanilla icecream. My daughter kept going back and breaking bits off the crust!
