    One of Australia's culinary secrets that the rest of the world is unaware of. But beware, it's love at first bite. Wedges with sour cream and sweet chilli dip.

    Serves: 4 

    • 4 large potatoes, parboiled then cut into wedges
    • paprika, to taste
    • salt, to taste
    • oil, for frying
    • 200ml sweet chilli sauce
    • 200ml sour cream

    Preparation:20min  ›  Cook:40min  ›  Ready in:1hour 

    1. Sprinkle the wedges with paprika and salt.
    2. Heat oil in a deep fryer then carefully fry the wedges in batches until crisp and golden brown.
    3. Serve with a dob of sour cream in sweet chilli as a dipping sauce.

    If you don't have a deep fryer

    You can heat the oil in a wok or large saucepan. You will know when it is ready for frying by CAREFULLY flicking in cold water off your fingers and listening for the "sing" or you can drop a match in and when the head ignites, it ready to fry.
