Heat oil in a deep fryer then carefully fry the wedges in batches until crisp and golden brown.
Serve with a dob of sour cream in sweet chilli as a dipping sauce.
If you don't have a deep fryer
You can heat the oil in a wok or large saucepan. You will know when it is ready for frying by CAREFULLY flicking in cold water off your fingers and listening for the "sing" or you can drop a match in and when the head ignites, it ready to fry.
