A light soup that is loaded with big chunks of fresh veggies. Potato, carrot, broccoli and zucchini in a mix of chicken and vegetable stock make this soup a delicious starter or light meal.
Add stocks and diced potatoes to a large saucepan then bring to boil. Simmer for 10 minutes then add onion, celery, carrot, broccoli and zucchini.
Bring back to boil and simmer with lid on for 5 minutes or until just tender. Add a little water if it looks too dry. Add salt and black pepper then serve with a sprig of watercress.
