Chocolate Chip Sandwich Cookies

    Chocolate chippies that are sandwiched together with a layer of chocolate fudge icing. These delicious morsels are amazing. You can use ice cream in place of the icing if you like.

    Serves: 12 

    • Biscuit
    • 2 1/4 cups (280g) flour
    • 1 teaspoon baking powder
    • 1 teaspoon salt
    • 250g soft butter
    • 1 cup (250g) white sugar
    • 1 cup (185g) brown sugar
    • 1 teaspoon vanilla essence
    • 2 eggs
    • 2 cups chocolate chips
    • Filling
    • 1 cup (200g) white sugar
    • 1/4 cup cocoa powder
    • 1/3 cup (80ml) milk
    • 70g butter
    • 1 pinch salt
    • 1 teaspoon vanilla essence

    1. Preheat oven to 180 degrees C.
    2. In a small bowl combine flour, baking powder and salt; set aside. In a large bowl; combine butter, sugar, brown sugar and vanilla essence; beat until creamy. Beat in eggs. Gradually add flour mixture; mix well. Stir in chocolate chips. Drop by rounded level teaspoons onto greased baking tray. Bake for about 12 minutes until just turning brown round the edges. Allow to cool.
    3. Filling

    4. In a saucepan combine sugar, cocoa, milk, butter and salt. Bring mixture to a rolling boil, stirring constantly for 2 minutes. Remove from heat and add vanilla then continue beating until icing starts to thicken slightly. The icing will be very creamy.
    5. Using a piping bag or a spoon, place icing on the bottom of one biscuit then top with a second. Enjoy.
