Fried Tomato and Tuna Spaghetti

    This is a quick and easy pasta to throw together for an easy lunch or a midweek dinner. Tuna, fried tomatoes and rocket provide assertive flavours.

    Serves: 4 

    • 400g spaghetti
    • 2 tablespoons olive oil
    • 4 medium ripe tomatoes, sliced thickly
    • 2 cloves garlic, chopped
    • 2 (185g) tins tuna in oil
    • 100g rocket
    • salt and pepper to taste

    1. Cook the pasta in a large pot of boiling water until al dente. Drain.
    2. While the spaghetti cooks, heat oil in a frypan over medium-high heat. Add tomato slices and fry for a minute on each side until browned.
    3. Add garlic, tuna and its oil and the rocket, stirring gently to combine. Cook 1-2 minutes until heated through and the rocket is wilted.
    4. Divide the pasta between bowls and spoon over the tomato mixture. Serve immediately with fresh pepper.
