Flourless Mango Torte Cake

This is a lovely moist cake. Serve dusted with icing sugar or with cream or ice cream. Only five ingredients, very simple to make.

Makes: 1 cake
- 2 mangoes, peeled
- 2 cups ground almonds
- 1/2 cup sugar
- 1 teaspoon baking powder
- 5 eggs

- Puree the mango flesh until smooth. You need about 2 cups of mango puree. Set aside.
- Place almond meal, sugar and baking powder in a food processor and combine well. Add the mango puree and blend well.
- Add the eggs one at a time, blending after each addition. Pour the batter into a greased and lined 20cm cake tin.
- Bake at 180 degrees C for 1 hour, then cool in the cake tin before removing.
