This is a lovely moist cake. Serve dusted with icing sugar or with cream or ice cream. Only five ingredients, very simple to make.

Makes: 1 cake

  • 2 mangoes, peeled
  • 2 cups ground almonds
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 5 eggs

Preparation:20min  ›  Cook:1hour  ›  Ready in:1hour20min 

  1. Puree the mango flesh until smooth. You need about 2 cups of mango puree. Set aside.
  2. Place almond meal, sugar and baking powder in a food processor and combine well. Add the mango puree and blend well.
  3. Add the eggs one at a time, blending after each addition. Pour the batter into a greased and lined 20cm cake tin.
  4. Bake at 180 degrees C for 1 hour, then cool in the cake tin before removing.
