Rice and Taboulleh

    This is a great use for leftover rice, but it has to be brown rice. If you want cook one cup of raw brown rice to make two cups of cooked.

    Serves: 6 

    • 1/2 cup burghul
    • 2 cups cooked brown rice
    • 2 tomatoes, chopped
    • 4 spring onions, sliced
    • 1/2 cup chopped parsley
    • 1/3 cup chopped mint
    • 2 tablespoons lemon juice
    • 1 tablespoon olive oil
    • 2 cloves garlic, crushed
    • 1/2 teaspoon sugar

    1. Place the burghul in a bowl, cover with boiling water and let stand 15 minutes. Rinse and drain well. Combine with remaining ingredients in a bowl and mix well.
