Roasted Capsicum Salad (Peperonata)

A lovely warm Italian style salad sometimes called peperonata. Colourful capsicums are roasted and peeled and tossed with basil, onion and vinaigrette.

Serves: 4 

  • 1 red capsicum
  • 1 yellow capsicum
  • 1 green capsicum
  • 12 basil leaves, torn
  • juice of 1 lemon
  • 1 tablespoon olive oil
  • 1 red onion, finely sliced
  • salt and pepper to taste

  1. Roast the capsicums and peeled them. Tear or chop them into bite size pieces.
  2. Mix all ingredients and serve warm.
