I have made this for many years, you can use any stone fruit if you don't want apricots. It will work with berries too.
3 pounds (1 1/3 kg) apricots
3 pounds (1 1/3 kg) sugar
- Cut up fruit and (remove stones ) put in preserving pan.
- Add sugar and lemon juice stir to combine.
- Bring to boil stirring frequently and boil for 30 mins.
- Test on saucer for setting; it will wrinkle when it is ready.
- Bottle in warm sterilized jars.
