    I have made this for many years, you can use any stone fruit if you don't want apricots. It will work with berries too.

    Ingredients
    Serves: 6 

    • 3 pounds (1 1/3 kg) apricots
    • 3 pounds (1 1/3 kg) sugar
    • 3 lemons

    Directions
    Preparation:15min  ›  Cook:30min  ›  Ready in:45min 

    1. Cut up fruit and (remove stones ) put in preserving pan.
    2. Add sugar and lemon juice stir to combine.
    3. Bring to boil stirring frequently and boil for 30 mins.
    4. Test on saucer for setting; it will wrinkle when it is ready.
    5. Bottle in warm sterilized jars.
