Garlic Parmesan Chips

    Parboiled then oven baked, these chips are tossed in garlic and olive oil then topped with freshly grated Parmesan cheese. Don't forget the pepper...mmmmm...

    Serves: 4 

    • 3 large potatoes, parboiled then sliced into chips
    • 1 tablespoon olive oil
    • 1 teaspoon crushed garlic
    • salt and freshly ground pepper, to taste
    • 40g grated Parmesan cheese

    1. Preheat the oven to 220 degrees C. In a bowl coat the potato chips in the olive oil. Sprinkle with garlic, salt and pepper then toss again to coat.
    2. Arrange the chips in a single layer on a medium baking tray. Do not crowd on the tray to make sure the chips turn crispy. Bake 20 minutes in the preheated oven or until golden brown, turning once.
    3. Sprinkle on the Parmesan then serve hot.
