This savoury brekkie is ready in minutes, just butter some toast and top with fried onion, capsicum, tomato and an egg. Mean brekkie feast for 2, enjoy!

Serves: 2 

  • 1 tablespoon olive oil
  • 4 slices onion
  • 4 slices capsicum
  • 4 slices tomato
  • 2 eggs
  • 2 slices hot buttered toast
  • 1 tablespoon grated Parmesan cheese
  • salt and pepper, to taste

  1. Heat the oil in a frying pan. Toss in the onion and capsicum then stir until onion begins to soften. Push to the side. Add in the tomato and cook until it beings to brown, set on top of the onion and capsicum.
  2. Crack in the eggs then cover with a lid. Cook until the white is stiff, about 5 minutes. Place eggs on the toast, top with the veggies, sprinkle on the cheese, salt and pepper.
  3. You better use a knife and fork for this one and extra serviettes.
