Heat the oil in a frying pan. Toss in the onion and capsicum then stir until onion begins to soften. Push to the side. Add in the tomato and cook until it beings to brown, set on top of the onion and capsicum.
Crack in the eggs then cover with a lid. Cook until the white is stiff, about 5 minutes. Place eggs on the toast, top with the veggies, sprinkle on the cheese, salt and pepper.
You better use a knife and fork for this one and extra serviettes.
