Lay the carrots on the chopping board and cut off the top and bottom ends. In the remaining carrot, cut out a "V" shape down the length of the carrot, only as deep as the core.
Using your vegetable peeler, round out the top of the hearts with one or two peels. Then down the side, peel at an angle to make a heart, 2 - 4 peels per side. Once you have reached the heart shape you desire, slice each carrot into "hearts" of your desired thickness.
Place in a saucepan of boiling water and cook until tender, about 8 minutes then drain. Stir in butter and honey. Enjoy.
For soups and stews
If you are using these in soups and stews, just stop after step 2, then add to your recipe when carrots are called for.
