    Ingredients
    Serves: 4 

    • 1 litre water
    • 400g brown lentils
    • 1/2 Spanish chorizo sausage, sliced
    • 1 potato, peeled and chopped
    • 2 carrots, chopped
    • 1 bay leaf
    • 75ml extra virgin olive oil
    • 1 onion, chopped
    • 2 teaspoons sweet paprika

    Directions

    1. Check the lentils for any small stones or grit then rinse in a sieve.
    2. In a pressure cooker, combine water, lentils, chorizo, potato, carrot, bay leaf and salt to taste. Close and cook under pressure for 10 minutes.
    3. Meanwhile, in a frying pan, cook the onion in the olive oil till soft. When soft, stir in the paprika. Remove from heat so that the paprika does not burn.
    4. When lentils are ready, stir in the onion and oil mixture. Serve and enjoy!
