Nachos Karen Style

    Friday Movie Night & Nachos. A family tradition, easy and relaxing to make while I have a cold corona.

    Serves: 4 

    • 2 packets of Nachos (one plain and one extra cheesy)
    • 1 tin refried beans
    • 1 red onion finely sliced (half rings)
    • 1 tin of whole asparagus
    • shredded cheese
    • 1 jar of salsa (or bolognese pasta sauce)
    • lettuce - shredded
    • shallots finely chopped
    • 1 fresh tomato chopped
    • sour cream
    • guacamole (2-4 avocados mashed with lemon juice and pepper)

    Preparation:15min  ›  Cook:15min  ›  Ready in:30min 

    1. Spread nachos over one large pizza tray (oven proof).
    2. Spoon refried beans evenly (in dobs) over nachos.
    3. Drain asparagus and spread evenly on top of beans and nachos.
    4. Spread finely sliced red onion over top.
    5. Spread chopped fresh tomato over top.
    6. Spread salsa (or bolognese sauce) over top.
    7. Sprinkle shredded cheese over the top (not too thick).
    8. Cook for 15 - 20 minutes in fan forced oven at 170 degrees C.
    9. While hot sprinkle shredded lettuce and shallots over the top.
    10. Serve with sour cream and guacamole - yummy ....


    If I don't have refried beans I use tofu diced in cubes, cooked in a pan with some oil and then add a packet of Mexican burito or taco spices.
