Custard Cupcakes

    The first time I tried cooking with custard powder in my cakes I was really pleased with the outcome, now it is one of my preferred options.

    Serves: 12 

    • 200g softened butter
    • 100g caster sugar
    • 2 eggs
    • 1 1/2 cups self raising flour
    • 1/2 cup custard powder
    • 1 cup milk

    Preparation:10min  ›  Cook:25min  ›  Ready in:35min 

    1. Preheat the oven to 180 degrees C. Line a cupcake tray with patty cups.
    2. In a large mixing bowl cream the butter and sugar. Add eggs one at a time. Fold through the sifted flour and custard powder alternately with the milk until a smooth batter is formed.
    3. 3/4 fill each of the cupcakes then bake in the preheated oven for 25 minutes or until cooked through.

    I don't know Pualani what the difference is but I can tell you that this particular recipe is Da Bomb. I made them today - its a super simple recipe with a lovely light batter. I sprinkled a bit of cinnamon sugar over the cupcakes before I baked them (cos cupcakes just aren't cupcakes in my book if they don't have a topping). They were delish - perfect for an afternoon treat  -  21 Mar 2015
