Homemade Hummus

    Hummus is my new healthy snack that is high in fibre, protein and taste. I eat it with fresh vegetables and grissini bread sticks as a dip.

    Serves: 8 

    • 1 (400g) tin chickpeas, drained
    • 1 garlic clove finely, diced
    • 1/4 cup tahini
    • 1/3 cup fresh lemon juice
    • 1 tablespoon extra-virgin olive oil
    • 1/2 teaspoon salt
    • 1 teaspoon ground cumin
    • 1 tablespoon extra-virgin olive oil

    1. In a food processor place the drained chickpeas and garlic, process to break up.
    2. Add the tahini, lemon juice and olive oil, process until smooth. Add the salt and cumin and process again until well combined.
    3. If not smooth add additional olive oil or lemon juice to taste. Serve in a bowl with desired accompaniments like vegetable sticks or grissini.
