Roast Hasselback Potatoes

This is a traditional way to get more flavour into your potatoes and add a bit of variety. Normally they are cooked in about a centimetre of stock but these ones are simply roasted.

Serves: 5 

  • 5 potatoes
  • olive oil, as required
  • seasoning salt, e.g. garlic bread salt

Preparation:15min  ›  Cook:1hour  ›  Ready in:1hour15min 

  1. Peel the potatoes then cut in half. Cut slits down the potatoes about 6mm apart and 1cm from the base.
  2. Preheat the oven to 180 degrees C.
  3. Cover the potatoes gently in the oil then roast in the preheated oven for 30 minutes. Remove from the oven and again coat in oil and add the seasoning salt.
  4. Continue to cook for another 30 minutes or until the potatoes are cooked through.
