Indonesian Gado Gado

    Coming from Indonesia this is one of my standby recipes to make when vegetarian friends come around. It is packed with essentials like protein.

    Serves: 4 

    • 1/2 cup satay sauce
    • 4 tablespoons chunky peanut butter
    • 2 tablespoons Shaoxing rice wine or water
    • 1/4 cabbage, sliced
    • 1/2 broccoli, broken into florets
    • 1 capsicum, sliced
    • 1 zucchini, sliced
    • 4 eggs

    1. Combine the satay sauce, peanut butter and rice wine in a bowl. Microwave in 30 second increments stirring each time until hot all the way through.
    2. Set up a steamer and add the prepared vegetables and cook until starting to lose their firmness.
    3. Gently fry the 4 eggs.
    4. To serve, place a base of steamed vegetables, top with the fried egg then drizzle with the peanut satay sauce.
