Coming from Indonesia this is one of my standby recipes to make when vegetarian friends come around. It is packed with essentials like protein.

Ingredients
Serves: 4
- 1/2 cup satay sauce
- 4 tablespoons chunky peanut butter
- 2 tablespoons Shaoxing rice wine or water
- 1/4 cabbage, sliced
- 1/2 broccoli, broken into florets
- 1 capsicum, sliced
- 1 zucchini, sliced
- 4 eggs

- Combine the satay sauce, peanut butter and rice wine in a bowl. Microwave in 30 second increments stirring each time until hot all the way through.
- Set up a steamer and add the prepared vegetables and cook until starting to lose their firmness.
- Gently fry the 4 eggs.
- To serve, place a base of steamed vegetables, top with the fried egg then drizzle with the peanut satay sauce.
